Mondeuse aged in oak barrels: for a few years, we have been maturing part of the Mondeuse in oak barrels, which gives it a different personality. It is entirely produced and aged in our cellars in Jongieux in Savoy - France. We reserve our best plots for this breeding. Entonnage is done in the spring following the harvest and the wine remains in barrels for 10 to 12 months. We then age this wine for an additional 9 to 12 months in vats. We do not use new barrels so as not to mark our wines and thus lose the characteristics so typical of the Mondeuse. This fruity, spicy, lightly roasted wine presents elegant tannins. If you like the Mondeuse, you will be pleasantly surprised by this oak barrel version.
