Roast wild boar cooked with Mondeuse and polenta


    Discover our red wine Jongieux Mondeuse with wild boar! Early winter meal when you have a hunter friend, let the aroma of Mondeuse flavor your meat and awaken your taste buds when you serve yourself a drink with your meal!

  • ½ liter of red wine Jongieux Mondeuse from Domaine Chevallier Bernard
  • 1 roast wild boar
  • 3 onions
  • 3 shallots
  • 1 carrot
  • 1 bouquet garni
  • Peppercorns
  • 1 glass of oil
  • ½ glass of vinegar
  • Thyme
  • Polenta

Making

  1. Prepare the marinade:
  2. Mince 2 onions and 2 shallots and put them in a salad bowl,
  3. Cut the carrot into slices and add it to the salad bowl
  4. Add the bouquet garni, the peppercorns, the glass of oil, the half glass of vinegar and the half liter of Mondeuse.
  5. Bathe the meat for 24 hours.
  6. Drain and pat the meat dry with a kitchen towel.
  7. In the fat, brown the meat as well as 1 onion, 1 shallot and thyme.
  8. Pour part of the marinade.
  9. Cook over low heat for 1h30 and serve with a polenta.
