Dried duck breast

Making

  1. Take a cake dish, put a good layer of salt at the bottom. (If you like thyme or rosemary, don't hesitate to add some to the salt)
  2. Place the duck breast previously rolled in salt on top of the dish and cover well with salt.
  3. Close the container and place it in the fridge for 2 days.
  4. Collect the duck breast, rinse it well with the rest of the salt and dry it well. A kitchen towel does the trick with a little pressure.
  5. When thoroughly dry, cover with the spice of your choice. Take a clean kitchen towel and add spices as well.
  6. Place the duck breast at the end of the kitchen towel over the spices and roll it up tightly. Tie all this up well and put the duck breast in the bottom of the fridge.
  7. Now 3 weeks of waiting. Yes it's long but it's worth it!
  8. 3 weeks later… It's finally time to taste! Our little advice: open a bottle of Jongieux Gamay red wine from Domaine Chevallier Bernard and share a good time!
